Baking Banana Bread

We had so much fun baking chocolate cookies that we decided to bake banana bread too.  We happened to have a couple of over ripe bananas so instead of throwing the bananas away we baked banana bread.   The recipe called for the following ingredients:

Chef Miriam

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups of mashed overripe bananas

To make the bread we first mixed all the dry ingredients and all the wet ingredients intp 2 separate bowls.  Then, we combined everything together and baked at 350 degrees.

Adding cake batter into a greased pan

We made some modifications to the original recipe:
Look at all those chocolate chips!

We added 1 cup of chocolate chips at the very end. Because we put chocolate chips and they are very sweet, we only put 1/2 a cup of sugar instead of 3/4.  We also added a couple of extra spices.  We added a teaspoon of cinnamon, nutmeg and vanilla.

Our favorite part of baking banana bread was mashing the overripe bananas.  The bread tasted more like cake instead of bread.  It was delicious!

  2. Dear Miriam,

It looks like you had a great time baking the banana bread. I have kind of lost my sweet tooth as I have gotten older, but I still love banana bread, pumpkin bread, and carrot cake.

When I lived in Belize we did a lot of cooking with bananas - ripe bananas, over-ripe bananas, and green bananas. Mashing them up was my specialty! It's so much fun to see them squish around the masher.

I agree with AA, the photographs on your posts are always spectacular. They complement the posts perfectly.

Have you ever baked bread? It can be very fun, but tiring, to knead and stretch the dough.

I look forward to your next post!

    Mr. Salsich

  7. @Selena,

I also love the banana bread. You are right, everything tastes better when you add chocolate chips. I like to eat them plain before adding them to the batter.

  8. Dear Miriam,

Another super-delicious post! I love all the photos that you include in your post. Photos alway add so much!

Banana bread is one of my favorite foods! My Grandma Smillie used to make it in the summertime. She used to wait until the bananas got real dark because she said that's when they are the best for baking bread. Do you agree with her?

I've never thought of putting chocolate chips in the batter! Love it!

How do you decide what to bake?

    Your proud teacher,
    Mrs. Y♥llis

  9. @ Miriam,

Yes, I will be making your banana bread soon and will let you know how it turns out. Thanks for encouraging me.

Now as for your question about AA the first letter is my first name and the second is for my surname.
Whats even more funny is that my middle name also begins with an A.

Maybe I should sign off with A.A.A.

From your blogging pal with the three A's.
